Batata w Bayd

Palestinian Batata w Bayd is essentially our own chips and eggs.

A simple dish that can be ready in 20 minutes or so. It should have lots of black pepper into it. Serve it with lots bread and shatta.

This is how to make it

Peel and cut 2-3 large potatoes into small cubes. Heat 2 tbls of sunflower oil and 1 tbls olive oil in a large pan, add the potato cubes, 1/2 tsp salt and plenty of black pepper. Cook stirring occasionally for 15-20 minutes or until the potatoes are golden brown. Crack in 4 large eggs and move the potatoes around so the eggs get cook through but still slightly runny.


Sprinkle the dish with a bit more salt, plenty of sumac and some oregano and parsley or fresh za’atar if it’s available. A last drizzle of olive oil before serving.
